| Bakra Eid Special Mutton Biryani Recipe |
Ingredients:
- 500g mutton, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes and drained
- 4 tablespoons ghee or oil
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 1/2 cup plain yogurt
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon biryani masala
- 1/2 teaspoon cumin seeds
- 4-5 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- Salt to taste
- Fresh cilantro and mint leaves for garnish
- Fried onions for garnish
- Saffron strands soaked in 2 tablespoons warm milk (optional)
For Rice:
- In a large pot, bring water to a boil. Add salt and whole spices (cumin seeds, cardamom, cloves, cinnamon stick).
- Add drained rice and cook until it's 70-80% done (parboiled). Drain and set aside.
For Mutton:
- Heat ghee or oil in a heavy-bottomed pan. Add sliced onions and fry until golden brown. Remove half for garnish.
- To the remaining onions in the pan, add ginger-garlic paste and sauté until fragrant.
- Add chopped tomatoes and cook until they soften.
- Add mutton pieces, red chili powder, turmeric powder, biryani masala, and salt. Cook on high heat until mutton changes color.
- Reduce heat, cover, and cook until mutton is tender, adding a little water if needed. Stir in yogurt and cook for another 5-7 minutes until the gravy thickens.
Layering and Dum Cooking:
- In a heavy-bottomed pot or handi, spread a layer of cooked rice at the bottom.
- Add a layer of cooked mutton over the rice.
- Repeat layers until all rice and mutton are used up, ending with a layer of rice.
- Drizzle saffron milk over the rice. Sprinkle fried onions, fresh cilantro, and mint leaves.
- Cover the pot tightly with a lid or aluminum foil. Cook on low heat (dum) for 15-20 minutes to allow flavors to meld.
Serving:
- Gently fluff the biryani with a fork before serving to mix the layers.
- Serve hot with raita, salad, and your favorite accompaniments.
