Ingredients:
- 500 grams mutton, cut into pieces
- 2 onions, finely sliced
- 3-4 tomatoes, chopped
- 2 tablespoons yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds (saunf)
- 1 teaspoon black peppercorns
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- Salt to taste
- 3 tablespoons cooking oil
- Fresh coriander leaves for garnish
Instructions:
Prepare the Spices:
- Dry roast cumin seeds, coriander seeds, fennel seeds, and black peppercorns in a pan until fragrant. Grind them to a fine powder and set aside.
Marinate the Mutton:
- In a bowl, mix yogurt, ginger paste, garlic paste, half of the ground spice powder, red chili powder, turmeric powder, and salt. Add the mutton pieces and coat them well with the marinade. Let it marinate for at least 1 hour in the refrigerator.
Cooking:
- Heat oil in a deep pan or pressure cooker over medium heat. Add sliced onions and sauté until they turn golden brown.
Add Tomatoes:
- Add chopped tomatoes to the pan and cook until they are soft and oil starts to separate from the masala.
Cook the Mutton:
- Add the marinated mutton along with the marinade to the pan. Mix well with the onion-tomato masala. Cook for 5-7 minutes, stirring occasionally.
Pressure Cook (if using):
- If using a pressure cooker, add a little water (about 1/2 cup), close the lid, and pressure cook for 3-4 whistles or until the mutton is tender and cooked through.
Simmer:
- If using a regular pan, cover and cook on low heat until the mutton is tender, stirring occasionally and adding a little water if needed to prevent sticking.
Final Seasoning:
- Once the mutton is cooked, add the remaining ground spice powder. Adjust salt and red chili powder according to your taste. Cook for another 2-3 minutes.
Garnish and Serve:
- Garnish with fresh coriander leaves. Serve hot Peshawari Namkeen Gosht with naan or rice.
