Ingredients
For Marination:

- 2 tablespoons red chili powder
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 tablespoon garam masala
- 1 tablespoon chat masala
- 1 teaspoon turmeric powder
- 1 teaspoon black pepper powder
- Salt to taste
For the Basting Sauce:
- 4 tablespoons mustard oil (or any cooking oil)
- 1 tablespoon butter, melted
- 1 teaspoon lemon juice
- 1 teaspoon red chili powder
- 1 teaspoon chat masala
For Garnish:
- Fresh coriander leaves, chopped
- Lemon wedges
- Sliced onions
Instructions
Marination:
- Prepare the Beef: Start by washing and patting dry the beef pieces.
- First Marination: In a large bowl, add the beef pieces, ginger-garlic paste, lemon juice, and raw papaya paste. Mix well and set aside for 30 minutes.
- Second Marination: After 30 minutes, add the yogurt, red chili powder, cumin powder, coriander powder, garam masala, chat masala, turmeric powder, black pepper powder, and salt to the beef. Mix thoroughly until all pieces are well coated.
- Marinate: Cover the bowl and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the meat to tenderize.
Cooking:
- Preheat Grill: Preheat your grill to medium-high heat. You can also use a grill pan or an oven.
- Prepare Basting Sauce: In a small bowl, mix together mustard oil, melted butter, lemon juice, red chili powder, and chat masala. This will be used to baste the beef while grilling.
- Skewering: Thread the marinated beef pieces onto skewers. If using wooden skewers, soak them in water for 30 minutes before use to prevent burning.
- Grill the Beef: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally and basting with the prepared sauce. Ensure the beef is cooked through and has a nice char.
- Alternative Cooking Method: If using an oven, preheat to 200°C (400°F). Place the skewers on a baking tray and bake for 20-25 minutes, turning once halfway through and basting with the sauce.
