| Recipe for Vegetable Sandwich |

Ingredients:
- 4 slices of whole grain bread
- 1 ripe avocado, mashed
- 1 small cucumber, thinly sliced
- 1 small tomato, thinly sliced
- 1 small red onion, thinly sliced
- 1 small carrot, grated
- 4 leaves of lettuce
- 1/4 cup alfalfa sprouts
- 2 tablespoons hummus
- Salt and pepper to taste
- Optional: a few slices of cheese, pickles, or olives
Instructions:
Prepare the Ingredients:
- Wash and slice the cucumber, tomato, and red onion.
- Grate the carrot and mash the avocado.
Assemble the Sandwich:
- Spread the mashed avocado on two slices of bread.
- Spread the hummus on the other two slices of bread.
- Layer the cucumber, tomato, red onion, grated carrot, lettuce, and alfalfa sprouts on the avocado-spread slices.
- Season with salt and pepper to taste.
- If using, add slices of cheese, pickles, or olives.
Complete the Sandwich:
- Place the hummus-spread slices of bread on top of the assembled vegetables.
- Press down gently to hold everything together.
