| Chicken Vegetable Sandwich Recipe |

Ingredients:
- 2 slices of whole-grain bread
- 1 boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 cup shredded lettuce
- 1/4 cup sliced tomatoes
- 1/4 cup sliced cucumbers
- 1/4 cup sliced bell peppers
- 1/4 cup grated carrots
- 1/4 cup sliced red onions
- 1 avocado, sliced
Instructions:
Prepare the Chicken:
- Season the chicken breast with garlic powder, salt, and pepper.
- Heat the olive oil in a skillet over medium-high heat.
- Cook the chicken breast for 5-7 minutes on each side or until fully cooked.
- Let it rest for a few minutes before slicing thinly.
Prepare the Spread:
- In a small bowl, mix the mayonnaise and Dijon mustard until well combined.
Assemble the Sandwich:
- Toast the slices of whole-grain bread until golden brown.
- Spread the mayonnaise-mustard mixture on one side of each slice of bread.
- Layer the shredded lettuce on one slice of bread.
- Add the sliced chicken breast on top of the lettuce.
- Layer the sliced tomatoes, cucumbers, bell peppers, grated carrots, red onions, and avocado on top of the chicken.
- Top with the other slice of bread, spread side down.
Serve:
- Cut the sandwich in half, if desired, and serve immediately.
